


I’ve rarely seen a chef or sous chef put a burger together in any place except grill cooks like those you see in your favorite joint. Everything is prepped and the burger patty especially. In more upscale eateries perfectly tasty, wonderfully cooked to order burgers are brought to us and which most us will declare, is the best we’ve ever had, and honestly, that would be genuine and true. Good chefs, line cooks and grill masters know what to do with when putting good beef on a bun.
However after watching the care with which chef David Peretin and his sous chef prepared the burger pictured above, a new item to their emerging lunch menu, was a treat. They weren’t fussy about it, just purposefully intent on creating as near perfect a burger as possible, and they did. I will willfully wait awhile (if I can!!!) before getting that next one. One perfect smashburger cannot be enough.
